Christmas Baking
I guess im too early to prepare for Christmas. Well, i didnt bake for Christmas due to the tight schedule. Hence, i prepared early this year. I will continue to put up photos of bakes, such as Christmas Cookies and Log Cakes in the coming weekends.

Mooncakes
I wanted to try out making mooncakes for the past few weeks, but i was too busy to start this project. Here are some of the mooncakes i made yesterday.
Flavours include:
Durian snowskin with durian lotus paste and melon seed
Cranberry snowskin with cranberry and lotus paste
Snowskin with peach lotus paste and peach cubes
Snowskin with green tea lotus paste and melon seed
Pandan snowskin with pure lotus paste and melon seed

Macarons
I tried making macarons many times, but its always unsuccessful. However, last weekend, i used another recipe and i succeed. Totally over the moon when i saw the macarons beautifully formed in the oven. I will try again the next weekend.

Classic Whole Cake
Made this fruit cake yesterday, with peach slices sandwiched between layers of sponge cake. Loaded with mango and kiwi slices. The other cake is blackforest, covered with chocolate curls. Prats requested the cake to be in heart shape for her hubby's birthday.

Tarts
First time making tarts after so many years. I love this crust, crumbly biscuit texture. These few weeks i am durian frenzy, all the bakes are made with durian.

Cup Desserts
Strawberry shortcake served in small cups? I was inspired by Lynn. And for the coming weeks, i shall have more variaties of cup desserts. Cup desserts are ideal especially for parties, no hassle.
Strawberry Shortcake
Filled with fresh strawberry, chantilly cream (made with mascarpone cheese) sandwiched in a layer of genoise sponge.
Durian Crumble
Calling all durian lovers. You will definately like this dessert. Can be eaten chilled like mousse or frozen like ice cream. For me, i prefer to eat it frozen. Topped with crunchy crumble. It is yummy!

Cupcakes
I am back with more flavours for the cupcakes. As mentioned in the previous post, i intended to make cupcakes for Valentine's Day, but did not due to time constrain. I have just tried a new recipe, that give me a real light cupcake. The texture is soft and light, to the extend that i do not mind another serving. I will switch to this recipe instead for future bakes. :)
Mini Cupcakes:

Chocolate Ganache Cupcakes:
Valrhona chocolate cupcake with chocolate ganache centre. This is extremely rich.
Cinnamon Raisin Cupcakes:
Inspired by my favourite Auntie Anne's Cinnamon Raisin pretzel. Cupcakes filled with cinnamon raisin.
Chocolate Cappuccino Cupcakes:
Valrhona chocolate cupcake with cappuccino buttercream centre.
Carrot Cupcakes:
Moist carrot cake, filled with raisins and walnuts.
This is just a smaller version of the cheesecake, with real blueberry.
Matcha Azuki Cupcakes:
Vanilla cupcake, with real blueberry. Topped with buttercream frosting and more blueberries.
Cookies & Cream Cupcakes:
Vanilla cupcake filled with crushed oreo cookies.
Raspberry & Valrhona Chocolate Cupcakes:
This is a very rich chocolate cupcake, made with Valrhona chocolate, with raspberry puree. I guess this will appeal to Valrhona lovers.
Mango Cupcakes:
Vanilla cupcakes filled with mango puree. How does it sound?
Chocolate Mint Cupcakes:
Valrhona chocolate cupcakes with hint of peppermint.

Shortbread
This is my first attempt in making shortbread. To my surprise, it taste nicer than cookies. I personally like the crumbly texture, superb. I am crazy about Isaphan macaroons, so when i saw the lychee & rose tea in the supermarket, i bought it without hesitation. I thought it is excellent to make shortbread with this, as the taste will be mild. It goes well with a cup of tea.
